Mestizo Mexican Cuisine Workshops: Consome de pollo, Chilaquiles con chorizo y frijoles refritos (Chicken consommé, Chilaquiles with chorizo and refried beans)

Join us for a hands-on cooking experience celebrating one of Mexico’s most iconic and beloved dishes: chilaquiles. In this flavorful workshop, you’ll learn to prepare crispy tortilla chips simmered in homemade salsa—choose between vibrant salsa verde or bold salsa roja—and top your dish with juicy shredded chicken or housemade chorizo crafted entirely from scratch.
You’ll mix your own blend of spices to create authentic Mexican chorizo, discovering how to balance heat and seasoning to achieve the perfect flavor. You’ll also cook chicken and use its broth to make consomé de pollo, a traditional and nourishing starter that pairs beautifully with your main dish.
Once everything’s ready, you’ll build your plate of chilaquiles with classic garnishes like crema, queso fresco, onions, avocado, and even a fried egg, if you’d like. Then, sit down with the group to enjoy your creation, and leave with a printed recipe and the culinary skills to recreate it at home.
This workshop is open to all skill levels and offers an authentic, flavorful introduction to the vibrant world of Mexican home cooking.
